Italian salad. Romaine lettuce, grape tomatoes, chickpeas, artichoke hearts, green and black olives, red onion, roasted red peppers, cucumbers, diced provolone cheese, salami and cooked ditalini pasta. Vinaigrette dressing. (I am leaving out the salami)
Protein Oatmeal Cookies
1/2 c oatmeal
1/4 c water
1/2 tsp cinnamon
1/4 tsp vanilla extract
A dash of salt
1 scoop protein powder (I used berry)
1 tbsp dried cranberries
1 tbsp vegan white chocolate chips
Blend oatmeal into a powder in your blender or coffee grinder. Transfer to a bowl. Blend banana, water, protein powder, salt, cinnamon, and vanilla extract. Mix with oatmeal flour. Add additional water if necessary. Mix in cranberries and chocolate chips. Scoop onto an oiled tray, and cook in toaster oven for 15 mins at 300 watts. (Toaster oven time may vary).
Makes 10 cookies, approx 50 cals each
